Rosemary

Rosmarinus officinalis

 

Rosemary grows well in full sun and well drained soil. Rosemary can grow from 18" to 3' depending on variety. Rosemary is comonly used for taste in cooking.

Recipes

Rosemary Honey Sweet Carrots

 

40 minutes

 

Ingredients:

4 large carrots, peeled and cut  into 1/4-inch slices

1/4 cup water

2 tbsp butter

1/4 cup honey

1 sprig fresh rosemary, leaves removed

 

Directions:

In a medium saucepan bring carrots, water, and butter to a boil. Reduce to medium heat and simmer for 10 minutes. Add the honey and rosemary and continue to simmer until the carrots are tender (about 5 minutes).

Rosemary Potato Wedges

 

75 minutes

 

Ingredients:

8 small red potatoes, quartered

1/4 cup extra-virgin olive oil, or as needed

salt and pepper for taste

1 1/2 teaspoons chopped fresh oregano

1 1/2 teaspoons garlic powder

1 tablespoon chopped fresh rosemary

 

Directions:

Preheat the oven to 375 degrees F. Place  potatoes into a large bowl. Pour olive oil over them, and stir until coated. Scatter potato wedges in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper. Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness.
