Oregano

Origanum

 

Oregano grows well in full sun and well drained soil. Greek oregano can grow to about 4' tall and its leaves are commonly used in cooking.

Roasted Carrots

 

55 minutes

 

Ingredients:

2 lbs carrots, chopped

3 tbsps extra-virgin olive oil

salt

freshly ground pepper

1 tsp fresh thyme leaves, chopped

1/2 tsp oregano

3 tbsps flat leaf parsley, finely chopped

 

Directions:

Preheat the oven to 400 degrees F. Oil a baking dish or pan that is large enough to fit all of the carrots in a single layer. Place the carrots in a large bowl, and toss with the olive oil, salt, pepper, thyme and oregano until well coated.

 

Place carrots in the baking dish or pan and cover with foil. Bake in the oven for 30 minutes. Uncover and test the carrots for tenderness. If the carrots are not tender enough, turn the temperature down to 375 degrees and bake for 10 to 15 more minutes. Add the parsley, making sure to stir gently, and taste. Adjust the taste with salt and pepper if desired.
