Fennel & Apple Salad

 

Can be prepared up to 1 hour before meal.

 

Ingredients:

2 large fennel bulbs

2 celery sticks

1 large green apple (Granny Smith)

half of a lemon. juiced

olive oil

salt & pepper for taste

 

Directions:

Slice the fennel bulbs horizontally into very fine slices and place in a large salad bowl (can use a food processor if desired). Finely slice the celery, and cut the apple into julienne strips.Toss it all together, then drizzle with lemon juice & olive oil, and add salt and pepper for taste, and toss to coat.
