Cucumber Cilantro Salad

Ingredients:
2 cucumbers
2 tbsp lime juice
1 tsp chili powder
1/4 tsp salt
1 tbsp fresh cilantro chopped
Directions:
Peel the cucumbers and slice them lengthwise into quarters. Cut them into 1 inch pieces and place them in a large bowl. Sprinkle with the cucumbers with the lime juice, chili powder, and salt. Toss until the cucumber are well coates. Then add the cilantro and toss until well mixed. Refrigerate until chilled.

Orange Cilantro Rice

Ingredients:
2 tsp. butter
1/2 cup diced onion
1 cuo cooked rice (white)
2 tsp. ground cumin
1/2 tsp. garlic powder
1/2 tsp. ground black pepper
1/8 tsp. cayenne pepper
1 1/2 cups orange juice
1/2 cup chicken broth
1/2 cup fresh chopped cilantro
salt for taste
Directions:
Melt the butter in a saucepan. Stir in onion, and cook until tender. Mix in rice, and season with cumin, garlic powder, onion powder, pepper, cayenne pepper, and salt. Cook and stir until brown. Add the orange juice and broth, and bring to a boil. Reduce heat to low, cover and simmer 20 minutes. Remove from heat, and mix in cilantro before serving.

Cilantro and LIme Dressing

Ingredients:
1 garlic clove
1/3 cup honey
1/4 cup lime juice
2 tsp balsamic vinegar
1 jalepeño pepper chopped (remove the seeds)
3/4 tsp fresh ginger, minced
1/2 tsp salt to taste (optional)
1/4 cup cilantro leaves
1/2 cup olive oil
Directions:
Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped. Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend. Turn the food processor/blender on, and slowly integrate the olive oil into the dressing.

Cilantro Lemon Shrimp

Ingredients:
2 cucumbers
20 jumbo shrimp (peeled and deveined)
6 lemons, zested
salt for taste (optional)
ground black pepper for taste
2 cups fresh cilantro chopped
1 lemon, for juice
Directions:
In a medium bowl, toss shrimp with lemon zest and cilantro to until coated. Heat the oil in a pan or skillet over medium heat. Sprinkle oil with salt, then stir in the shrimp, lemon zest, and cilantro. Cook until shrimp are opaque (stirring often for about 5 minutes). Transfer to a serving bowl, drizzle with remaining oil, lemon zest, and olive oil from the skillet. Squeeze lemon juice over shrimp, season with pepper, and serve immediately.
