Catnip, Common - Nepeta cataria

Fresh or dried young leaves are loved by many cats. 30" tall plant has small white flowers and self-seeds readily. Keep flowers trimmed for best leaf production.

USES: Cat toys, or use leaves and flowerheads in tea for humans. Attracts butterflies.
CARE: Prefers full sun and average, well drained soil.
HARDINESS: Perennial. Zone 3-9.
Chamomile, German - Matricaria recutita
White daisy-like flowers with yellow centers bloom in summer and fall. Finely divided. apple scented foliage grows 1-2 feet tall.
USES: Flowers used in tea and shampoo and are less bitter than Roman Chamomile.
CARE: Plant in well drained soil in sun.
HARDINESS: Annual
HARVEST & STORAGE: Collect flowers when first fully opened. For long term storage freezing is best - they lose volatile oil rapidly when dried.
Chamomile, Roman - Chamaemetum nobile
White daisy-like flowers with yellow centers bloom in summer. Fragrant apple scented finely cut foliage. Grows to 1 feet tall, spreading by creeping stems.
USES: Most commonly used to brew a relaxing tea.
CARE: Grow in light, moist  well drained soil in sun to partial shade.
HARDINESS: Perennial. Zones 5-9.

Chervil - Anthriscus cerefollium
Ferny light green leaves with an anise flavor.
USES: Soups, salads, fish and as a garnish. Lengthy heating turns the flavor bitter.
CARE: Moist, loose soil in partial shade. 9 - 12" apart. Plant every 3 weeks for a continuous supply.
HARDINESS: Annual
Chives, Garlic - Allium tuberosum
Flat blue green leaves grow tiny bulbs. Fragrant starry white flowers in late summer. Grows 12-24". Mild garlic flavor.
USES: Leaves used in salads, soft cheeses and stir-fries. Lengthy cooking destroys the flavor. Use any time instead of regular chives. Attracts butterflies. Edible flowers.
CARE: Grow in rich, well drained soil in full sun.
HARDINESS: Perennial. Zones 3-0.
Chives - Allium schoenoprasum
Slender dark green leaves grow from tiny bulbs. Lavender globes of flowers in June. Height 12". Mild onion flavor.
USES: Leaves used with potatoes, eggs, soft cheeses. Flowers used in salads and herbal vinegars. Attracts butterflies.
CARE: Grow in rich, well drained soil in full sun.
HARDINESS: Perennial. Zones 3-0.
Cilantro, Coriander - Coriandrum sativum
Slow  blooming variety with flavorable foliage. The leaves are sold as cilantro while the seeds are called coriander. 12 - 15" tall. Make successive plantings 2 weeks apart for continued leaf production.
USES: Young leaves used in salads, poultry recipies. Crushed seeds used in seasoning for sausage, beans, stews, cookies.
CARE: Grow in moist, well drained fertile soil in full sun.
HARDINESS: Annual
Cilantro, Vietnamese - Polygonum odoratum
Tender  perennial with cilantro-lemon scented leaves. Aka Fau Rum. Grows 8 10" tall. Does not go to seed like regular cilantro so you harvest all summer.
USES: Use instead of cilantro in recipies.
CARE: Grow in moist, well drained fertile soil in full sun to partial shade.
HARDINESS: Tropical. Zone 11+
Curry Plant -Helichrysum angustiflium
Silver needle-shaped leaves and yellow flowers. Leaves have the aroma of curry powder. (This is not true curry as it is a mix of different species).
USES: Mainly ornamental/aromatic. Sprigs are added to rice, veggies, and deviled eggs.
CARE: Full sun. Well drained soil.
HARDINESS: Perennial. Zones 8-9.
